Sibwon-ppang, the coin-shaped cheese bread sold on the streets of Gyeongju. A soft, faintly sweet pancake batter is baked in a mould stamped like the old 10 won coin and stuffed with molten mozzarella, so it pulls into long strings when you tear it open. Eat it straight from the pan while the cheese is still stretchy.

Method

  1. Sift 70 g of plain flour with 0.5 tsp of baking powder into a bowl, then whisk in 15 g of caster sugar and 1 pinch of salt.
  2. In a jug, beat 1 egg with 60 ml of milk and 1 tsp of melted butter until evenly combined.
  3. Pour the wet mix into the dry and whisk just until smooth and thick enough to fall slowly from the whisk — stop as soon as the flour disappears, or the bread turns tough. Rest the batter 10 minutes at room temperature so the gluten relaxes.
