Boeber

A fragrant Cape Malay milk drink thickened with vermicelli and sago, scented with cardamom, cinnamon and rose water. Traditionally made on the fifteenth night of Ramadaan and served warm in a mug.

Method

  1. Put 1 tbsp of sago pearls in a small bowl, cover well with cold water and leave to soak for 30 minutes, until softened and slightly swollen. Drain in a fine sieve and set aside.
  2. Melt 1 tsp of butter in a small heavy-based saucepan over a medium-low heat. Break 15 g of vermicelli into roughly 3 cm lengths, add to the pan and fry for 2-3 minutes, stirring constantly, until the strands smell nutty and turn light golden. Do not let them darken.
  3. Pour in 300 ml of full-cream milk and add 3 bruised cardamom pods and 1 cinnamon stick. Bring slowly to a bare simmer over a medium-low heat, stirring so the milk does not catch on the base of the pan.
