Mumbai's famous street-side toast sandwich: soft white bread stacked with green coriander chutney, boiled potato, tomato, cucumber and onion, dusted with chaat masala and pressed in butter until golden. Served in triangles with ketchup and a shower of sev.

Bombay Sandwich

Method

  1. Put 1 potato in a small pan of salted cold water, bring to the boil and simmer for 15-18 minutes until a knife slides through easily. Drain, cool under running water, peel and slice into even 5 mm rounds.
  2. For the green chutney, grind 20 g coriander, 5 g mint leaves, 1 green chilli, 1 clove garlic, 1 tsp lemon juice, 0.25 tsp sugar and a good pinch of salt to a thick, smooth paste, adding only a teaspoon or two of water — it must be spreadable, not runny.
  3. Slice 1 tomato and 0.5 cucumber into thin 2-3 mm rounds and 0.5 red onion into fine rings. Pat the tomato and cucumber dry on kitchen paper so the bread does not go soggy.
