Cheese on Toast

The British teatime standby: thick slices of bread toasted, piled with grated mature Cheddar and grilled until bubbling, brown and just starting to catch at the edges. A shake of Worcestershire sauce underneath gives it the savoury tang that turns it from melted cheese into proper cheese on toast.

Method

  1. Heat the grill to its highest setting and set the shelf so the food will sit about 8 cm below the element. Coarsely grate 75 g of mature Cheddar onto a plate — grate it rather than slice it, so it melts evenly before the bread dries out.
  2. Stir 0.5 tsp of English mustard through the grated cheese with a fork, loosening it into rough crumbs rather than a paste.
  3. Lay 2 slices of thick-cut bread on the grill pan and toast for about 1 minute a side, until just pale gold and dry to the touch but still soft inside. This first toasting stops the base going soggy under the melting cheese.
