Devils on Horseback

A Victorian savoury of prunes stuffed with almonds and mango chutney, wrapped in streaky bacon and grilled until crisp. Served hot on buttered toast with a little watercress.

Method

  1. Heat the grill to its highest setting and set the rack about 10 cm from the element. Line the grill pan with foil, as the bacon fat and chutney will catch.
  2. Slit each of the 8 prunes along one side with a small knife, without cutting them in two. Push 8 blanched almond into each cavity and add a small dab of the 2 tsp of mango chutney alongside, then press the prune closed round the filling.
  3. Lay the 4 rashers of streaky bacon on a board and stretch each one thin with the back of a knife, then cut them in half across to give sixteen short pieces — you need one for each prune, so keep the neatest eight and save the rest.
