Eve's Pudding

A homely British baked pudding of tart Bramley apples under a light buttery sponge, served hot from the dish.

Method

  1. Heat the oven to 180C (fan 160C/gas 4). Rub a 300 ml ovenproof dish or deep ramekin with a little of the butter and set it on a baking tray.
  2. Peel, quarter and core 1 Bramley apple and slice it about 5 mm thick. Toss the slices with 15 g of caster sugar and 1 tsp of lemon juice, then pile them into the buttered dish — they should come about two-thirds of the way up and can sit slightly domed, as they collapse as they cook.
  3. In a small bowl, cream 25 g of softened butter with 30 g of caster sugar, using a wooden spoon or hand whisk, for 2-3 minutes until pale, light and fluffy. Beat in 0.25 tsp of grated lemon zest if using.
