The old Midlands and Welsh butcher's supper: coarse pork and liver meatballs seasoned with sage and mace, wrapped in caul fat and baked in a dark onion gravy. Serve with mashed potato and mushy peas.

Method

  1. Put 15 g of caul fat in a bowl of cold water and leave to soak for 10 minutes to loosen it, then drain, pat dry on kitchen paper and spread it flat on a board. Cut it into 2 rough squares, each big enough to wrap a ball. Heat the oven to 200C.
  2. Melt 1 tsp of lard in a small frying pan over a medium heat and cook 40 g of the chopped onion for 5 minutes, stirring, until soft and just golden. Scrape into a mixing bowl and leave to cool; keep the pan, unwashed, for the gravy.
  3. Chop 100 g of pig's liver as finely as you can, or pass it through the coarse plate of a mincer, and add it to the cooled onion with 80 g of minced pork belly, 25 g of fresh breadcrumbs, 1 tsp of chopped sage, the pinch of mace, 0.25 tsp of salt and a good grinding of black pepper. Mix hard with your hand for a minute so the mixture binds and feels slightly sticky.
