The British cheese toastie at its simplest: thick slices of white bread buttered on the outside, packed with sharp mature Cheddar sharpened by English mustard and a shake of Worcestershire sauce, then griddled in a heavy pan until the crust is deep gold and the cheese runs.

Method

  1. Coarsely grate 75 g of mature Cheddar into a bowl — grate it yourself, as pre-grated cheese is coated and melts stringy rather than smooth. Stir through 1 tsp of English mustard, 1 tsp of Worcestershire sauce and a good grind of black pepper so the seasoning is spread through the cheese.
  2. Take 2 slices thick slices of white bloomer and spread 12 g of softened salted butter over one side of each, working right into the corners and crust — this is the outside of the sandwich and every unbuttered patch will stay pale.
  3. Set one slice buttered-side down on a board and heap the seasoned cheese over it, pushing it out to the very edges so it melts and crisps against the crust. Top with the second slice, buttered side facing up, and press down lightly with your palm.
