The everyday British ham sandwich: good cooked ham piled between buttered slices of soft white bloomer, with a scrape of English mustard, crisp lettuce and a slice of tomato. Cut on the diagonal and eaten with a packet of crisps.

Method

  1. Take 10 g of butter out of the fridge 15 minutes ahead so it is properly soft and spreadable — cold butter tears soft bread.
  2. Lay 2 slices of bread on a board and spread the softened butter evenly over both, taking it right into the corners: the butter is what keeps the bread from going damp.
  3. Spread 1 tsp of English mustard thinly over the buttered face of one slice only. Any more and it will overwhelm the ham.
