Chewy glutinous rice balls filled with sweet red bean paste, rolled in sesame seeds and slowly deep-fried until hollow, puffed and golden. A classic Chinese sesame ball, sold warm from the wok in Indonesian Chinese bakeries and market stalls.

Method

  1. Put 30 g of caster sugar in a small bowl and pour over 75 ml of just-boiled water, stirring until the sugar has completely dissolved. Let it stand for a minute so it is hot but not scalding.
  2. Tip 100 g of glutinous rice flour into a mixing bowl, make a well and pour in the hot syrup. Stir with a chopstick until it comes together in shaggy lumps, then knead on the work surface for 5 minutes until you have a smooth, soft dough with the feel of an earlobe; it should be tacky but not sticky. Cover with a damp cloth and rest 15 minutes.
  3. Meanwhile roll 60 g of sweet red bean paste into 4 equal balls and chill them briefly so they hold their shape.
