Kerala Beef Fry

Beef ularthiyathu — cubes of beef pressure-cooked with pepper, coriander and turmeric, then roasted down in coconut oil with slivers of coconut, shallots and curry leaves until the masala clings dark and dry to the meat. A Sunday staple of Christian kitchens in central Kerala, eaten with kappa, parotta or rice.

Kerala Beef Fry

Method

  1. Put 200 g of beef cubes into a pressure cooker with 0.25 tsp turmeric, 1 tsp Kashmiri chilli powder, 1 tsp coriander powder, 0.5 tsp coarsely crushed black pepper, 0.25 tsp crushed fennel seeds, 1 tsp chopped ginger, 1 tsp chopped garlic and 0.5 tsp salt. Rub the spices into the meat with your hands so every cube is coated and leave it 10 minutes while you slice the aromatics.
  2. Add 2 of the sliced shallots, 1 chopped green chilli, one sprig of the curry leaves and 60 ml water to the cooker. Close it and cook on medium heat for 4 whistles, about 15 minutes, then take it off and let the pressure fall naturally. The beef should be tender but not falling apart.
  3. Open the cooker and boil the beef uncovered on high heat for 3 to 4 minutes until the liquid has reduced to a thick masala clinging to the meat. Set aside.
