Kongbap

A Korean everyday bowl of rice steamed with soaked soybeans, so the beans turn nutty and tender in among the sticky short-grain rice. Served plain alongside soup and banchan.

Method

  1. The night before, pick over 25 g dried soybeans and discard any split or shrivelled ones. Cover them with plenty of cold water in a bowl — they will roughly double in size — and leave to soak for 8 to 10 hours at room temperature.
  2. Drain the soaked beans, rinse them under cold running water and rub off any loose skins. Set aside in a sieve to drain fully.
  3. Put 130 g short-grain rice in a bowl, cover with cold water and swirl with your hand, pouring off the cloudy water. Repeat 3 or 4 times until the water runs almost clear, then cover with fresh water and soak for 30 minutes. Drain in a sieve for 5 minutes.
