Marie Rose Sauce

The pink, faintly spicy cocktail sauce that dresses a British prawn cocktail — mayonnaise loosened with ketchup and sharpened with Worcestershire sauce, lemon and a whisper of cayenne. Mixed by hand in a bowl in five minutes and best rested before serving.

Method

  1. Spoon 3 tbsp of mayonnaise into a small cold bowl — a metal or glass one, so it stays chilled — and loosen it with a few turns of a small whisk or the back of a teaspoon.
  2. Add 1 tbsp of tomato ketchup and stir slowly until the sauce is a uniform coral pink with no streaks. Stir rather than beat: whipping air into it makes the sauce mousse-like instead of coating.
  3. Work in 0.5 tsp of Worcestershire sauce and 0.5 tsp of lemon juice a little at a time, so the acid does not split the mayonnaise. The sauce should slacken just enough to fall thickly from the spoon.
