Masala Omelette

The everyday Indian omelette: eggs beaten with onion, green chilli, coriander and a little turmeric and chilli powder, fried in ghee until just set and served hot with toast or chapati.

Method

  1. Very finely chop 0.5 small onion, 1 green chilli, 1 small deseeded tomato and 2 tbsp coriander leaves. Keep the pieces small so the omelette sets evenly and does not tear when folded.
  2. Crack 3 eggs into a bowl and beat hard with a fork for about 30 seconds, until the whites and yolks are completely combined and slightly frothy — this gives the omelette its light texture.
  3. Beat in 0.25 tsp turmeric, 0.25 tsp red chilli powder, 0.25 tsp salt and 1 pinch black pepper, then fold in the chopped onion, chilli, tomato and coriander. Let the mixture stand 2 minutes so the salt draws a little moisture from the onion.
