Mattar Paneer

A North Indian curry of soft paneer cubes and green peas in a spiced onion-tomato gravy, finished with garam masala and fresh coriander. Eat it with hot roti or plain rice.

Method

  1. Put 100 g of paneer cubes in a bowl, cover with hot water and a pinch of salt, and leave to soften for 10 minutes. Drain just before you need them — this keeps the cheese silky in the gravy.
  2. Heat 1 tbsp of ghee in a small kadhai or heavy frying pan over medium heat. Add 0.5 tsp of cumin seeds and let them crackle for about 20 seconds, then tip in 70 g of finely chopped onion with a pinch of the salt and fry, stirring often, for 6-7 minutes until evenly golden brown.
  3. Lower the heat slightly and add 2 cloves of crushed garlic, 1 tsp of grated ginger and 1 slit green chilli. Fry for 1 minute until the raw garlic smell goes, then add 0.25 tsp of turmeric, 0.5 tsp of Kashmiri chilli powder and 1 tsp of ground coriander and stir for 20 seconds so the spices bloom without burning.
