Morioka Jajamen

Morioka's own take on Chinese zhajiangmian: warm flat wheat noodles under cool cucumber matchsticks and a dark, sweet-savoury pork and miso sauce, mixed at the table. Finish the meal the local way by cracking an egg into the bowl with hot noodle water for a chitantan soup.

Method

  1. Warm 1 tsp of toasted sesame oil in a small frying pan over medium heat. Add 1 grated clove of garlic and 1 tsp of grated ginger and stir for 30 seconds, until fragrant but not coloured.
  2. Add 80 g of minced pork and break it up with a wooden spatula. Fry for 4 minutes over medium heat, pressing the meat flat now and then, until no pink remains and the fat has rendered out clear.
  3. Stir in 1 tbsp of miso, 1 tsp of sesame paste, 1 tsp of sugar, 1 tsp of sake, 1 tsp of soy sauce and 2 tbsp of water. Lower the heat and simmer 6 minutes, stirring constantly so the miso does not catch, until the sauce is very thick, dark and glossy and holds its shape on the spoon. Season with a pinch of white pepper and set aside off the heat.
  4. Cut 50 g of cucumber into 5 cm matchsticks as fine as you can and keep them cool. Finely chop 1 tbsp of spring onion for the soup at the end.
