A single thick slice of buttered granary bread piled with Cheddar, ham, salad and a spoonful of tangy pickle — the classic British open sandwich, eaten with a knife and fork.

Method

  1. Heat the grill to hot. Lay 1 thick slice of granary bloomer on the grill rack and toast for about 1 minute a side, until just golden but still soft in the middle. Lift onto a board and leave for 1 minute so the butter will not vanish into it.
  2. Spread 10 g of softened salted butter over the warm toast, taking it right to the crust so no corner is dry, then add 1 tsp of English mustard in a thin scrape over the butter.
  3. Tear 2 butterhead lettuce leaves to fit and lay them flat on the bread as a base — they keep the salad juices off the toast.
