Seekh Kebab

Spiced minced lamb kneaded to a paste, moulded onto flat skewers and charred over fierce heat until smoky outside and juicy within. Served the Punjabi way with lemon, raw onion rings and mint chutney.

Method

  1. Dry-roast 1 tbsp of gram flour in a small heavy pan over low heat, stirring, for 3 minutes until it smells nutty and turns a shade darker; tip onto a plate to cool. In the same pan toast 0.5 tsp of cumin seeds for 30-40 seconds until fragrant, then crush coarsely.
  2. Put 40 g of grated onion in a piece of muslin or a clean tea towel and squeeze out every drop of juice — wet onion makes the kebabs fall off the skewer. Finely chop 1 green chilli, 1 tbsp of coriander leaves and 1 tsp of mint.
  3. In a bowl combine 200 g of lamb mince with the squeezed onion, 1 tsp of ginger paste, 1 tsp of garlic paste, the chilli and herbs, the roasted gram flour and crushed cumin, 0.5 tsp of garam masala, 0.25 tsp of red chilli powder and 0.5 tsp of salt.
