Shirokuma

Kagoshima's famous white bear shaved ice: a mountain of finely shaved ice drenched in condensed milk syrup, hiding sweet azuki beans, chewy shiratama dumplings and fruit, with a bear's face set on top.

Method

  1. At least 6 hours ahead, pour 250 g of water into a container that fits your ice shaver and freeze it solid; a clear, slowly frozen block shaves into the soft snow shirokuma needs. Put the serving bowl in the freezer too.
  2. Make the shiratama: put 20 g of shiratamako in a small bowl and work in 18 ml of water a little at a time, kneading until the dough is as soft as an earlobe and no longer cracks. Roll into 4 balls and press a dimple into each centre with your thumb.
  3. Bring a small pan of water to a rolling boil and drop in the dumplings. They will sink, then float after about 2 minutes; boil 1 minute more, then lift them straight into iced water. Once cold and firm, drain and keep chilled.
