Spam Fritter

A chip-shop classic: thick slices of Spam dipped in a light, crisp batter and deep-fried golden, salted and splashed with malt vinegar.

Spam Fritter

Method

  1. Chill the tin of Spam for 20 minutes so it cuts cleanly, then turn it out and cut 3 slices about 1 cm thick. Pat both sides thoroughly dry with kitchen paper so the batter will grip.
  2. Sift 60 g of plain flour into a bowl with 0.5 tsp of baking powder and 0.25 tsp of the salt. Whisk in 80 ml of ice-cold water a little at a time until you have a smooth, lump-free batter with the consistency of double cream — it should coat the back of a spoon and drip slowly. Leave it to rest for 10 minutes.
  3. Pour the sunflower oil into a deep, heavy pan, filling it no more than one third full, and heat to 180C. If you have no thermometer, a cube of bread should brown in about 40 seconds.
