Spotted Dick

A proper British steamed suet pudding, studded with currants and scented with lemon, turned out hot and swamped in custard. Light, spongy and old-fashioned — the sort of thing that ends a Sunday lunch in winter.

Method

  1. Butter a 300 ml pudding basin thoroughly with the 1 tsp of softened butter, working it right into the base and up the sides, and press a small disc of baking paper into the bottom so the pudding releases cleanly.
  2. Set a steamer over a pan of water, or stand an upturned saucer in a deep saucepan, and bring the water to the boil with the lid on — it should come no more than halfway up the basin once it goes in.
  3. In a mixing bowl, stir together 75 g of self-raising flour, 35 g of shredded suet, 30 g of caster sugar and 1 pinch of fine salt, rubbing the suet through the flour with your fingertips until evenly dispersed. Toss in 50 g of currants and 0.5 tsp of finely grated lemon zest so the fruit is coated in flour and won't sink.
