The thick Skåne pancake: a slowly set egg-and-milk batter cooked in a cast-iron pan in pork dripping, served straight from the pan with crisp salt pork and lingonberry jam.

Method

  1. Sift 40 g of plain flour into a bowl and whisk in a third of the 150 ml of milk to a completely smooth, lump-free paste before loosening it with the rest of the milk.
  2. Beat in 2 eggs one at a time, then 0.25 tsp of salt and 1 tsp of caster sugar. The batter should be the thickness of single cream. Cover and let it rest 20 minutes so the flour swells.
  3. Lay 80 g of thinly sliced salted pork belly in a cold 20 cm cast-iron pan and set it over medium heat. Fry 6-8 minutes, turning once, until the fat has run out and the slices are golden and crisp. Lift them onto a warm plate.
