A single-serving American apple crisp: cinnamon-spiced apple baked under a buttery oat and brown sugar topping until the fruit bubbles and the crumble turns deep golden. Best eaten warm, straight from the dish.

Method

  1. Heat the oven to 190C (170C fan) and set a rack in the middle. Lightly butter a 300 ml ovenproof dish or ramekin and set it on a small baking tray to catch any juices.
  2. Peel, quarter and core 1 apple, then slice the quarters about 5 mm thick. Toss the slices in a bowl with 1 tsp caster sugar, 1 tsp lemon juice, 0.25 tsp ground cinnamon and 1 tsp plain flour until every slice is coated — the flour thickens the juices as they cook.
  3. Pack the apples into the buttered dish, pressing them down firmly and scraping in every bit of sugary juice. They should sit just below the rim, as they will sink as they soften.
