Method

  1. Lay 3 rashers of streaky bacon in a cold 20 cm non-stick or cast-iron skillet and set it over medium heat. Cook 6-7 minutes, turning two or three times, until the fat has rendered and the bacon is crisp and deep amber. Lift onto kitchen paper and pour off the fat, leaving only a thin film in the pan.
  2. Split the 1 English muffin with a fork rather than a knife so the crumb stays craggy. Toast both halves cut side down in a dry pan or in the toaster for 2 minutes, until golden with a few dark spots.
  3. Spread 2 tsp of softened butter over the hot cut faces so it soaks in, and set the halves aside cut side up.
