Bumpy Cake

The Detroit classic: a moist buttermilk devil's food cake ridged with vanilla buttercream bumps and poured over with dark chocolate fudge, so the ridges show through the glossy top. Sized as one small loaf cake for one.

Method

  1. Heat the oven to 180C (160C fan) and line a small loaf tin, about 15 x 7 cm, with baking paper, leaving an overhang at the long sides to lift the cake out later.
  2. In a bowl, whisk 50 g of plain flour with 45 g of caster sugar, 10 g of cocoa, 0.25 tsp of bicarbonate of soda and 1 pinch of fine salt until no streaks of cocoa remain.
  3. In a jug, beat 1 beaten egg with 50 ml of buttermilk, 1 tbsp of oil and 0.25 tsp of vanilla. Pour into the dry ingredients and whisk just until smooth and glossy, about 30 seconds; do not overwork it or the crumb will toughen.
