A retro American ladies'-lunch salad from the mid-twentieth century: a ring of pineapple set on a crisp lettuce leaf, a peeled banana standing upright in the middle as the candle, a drizzle of mayonnaise or cottage cheese for melting wax, and a maraschino cherry on top for the flame.

Method

  1. Put a small salad plate in the fridge to chill. Wash 1 whole iceberg lettuce leaf, shake it dry and pat it with a tea towel so no water thins the dressing later.
  2. Lay the chilled leaf on the cold plate with the cupped side up, pressing the rib gently against the plate so the leaf sits flat and steady.
  3. Drain 1 pineapple ring thoroughly, blot it on kitchen paper and set it in the middle of the lettuce cup. It is the candleholder, so it must not slide.
