Method

  1. Tip 120 g of cold full-fat sour cream into a small bowl and beat it with a spoon or small whisk for a few seconds until completely smooth and glossy, with no lumps clinging to the sides.
  2. Scatter 1.5 tbsp of dried onion soup mix over the cream and whisk it in thoroughly, working it into the middle first so the dried flakes and powder disperse evenly rather than clumping.
  3. Season with 0.5 tsp of lemon juice and 1 pinch of freshly ground black pepper. Hold back on salt for now — the soup mix carries plenty, and it will taste saltier once the dip has rested.
