Sweden's best-loved no-bake treat: soft oats worked with butter, sugar, cocoa and a splash of strong coffee, rolled into balls and coated in pearl sugar or coconut. Made in every Nordic kitchen and eaten cold with a cup of coffee.

Method

  1. Take 30 g of butter out of the fridge and leave it on the counter for about 30 minutes, until it is soft enough to press a finger into but not melted or greasy.
  2. Brew 1.5 tbsp of strong coffee and set it aside to cool completely to room temperature — warm coffee will melt the butter and make the dough oily.
  3. In a small bowl, beat the soft butter with 25 g of caster sugar, 8 g of cocoa powder, 1 tsp of vanilla sugar and 1 pinch of salt, using a wooden spoon or spatula, for 1-2 minutes until you have a smooth, glossy chocolate paste with no dry cocoa left.
