Çoban Salad

Turkey's everyday shepherd's salad: tomato, cucumber, green pepper and onion chopped small, salted and dressed simply with olive oil and lemon. Sharp, cold and juicy, it belongs beside grilled meat or a plate of beans.

Method

  1. Cut 150 g of tomato into roughly 1 cm dice, working over the bowl so none of the juice is lost — that juice is half the dressing. Leave the skins on.
  2. Cut 100 g of cucumber into dice the same size as the tomato. If the skin is thick or waxed, peel it in stripes first; if it is a thin-skinned Turkish cucumber, leave it whole. Add to the bowl.
  3. Split 40 g of green pepper lengthways, scrape out the seeds and white ribs, and slice into thin half-rings. Add to the bowl.
