Instructions

  1. Pat 2 hot dogs completely dry with kitchen paper, wet sausages shed their batter. Push a wooden skewer lengthways into each one, about two-thirds of the way in, leaving a firm handle (2 skewers in all).
  2. Dust the skewered hot dogs all over with 1 tbsp cornflour, tapping off the excess, and rest them on a plate in the fridge while you mix the batter.
  3. In a bowl, whisk together 45 g fine cornmeal, 45 g plain flour, 1 tbsp caster sugar, 1 tsp baking powder, 0.25 tsp bicarbonate of soda and 0.25 tsp fine salt.
