Cuban Sandwich

The pressed ham, roast pork and Swiss cheese sandwich of Tampa and Miami: mojo-roasted pork, sweet ham, melting cheese, dill pickles and yellow mustard on buttered Cuban bread, flattened on a hot plancha until the crust crackles and the cheese runs.

Method

  1. Set a heavy cast-iron pan or a flat sandwich press over medium heat and put a second heavy pan, a foil-wrapped brick or a bacon press nearby to weight the sandwich. Let the pan heat for 3-4 minutes while you build.
  2. Split 1 Cuban roll horizontally with a bread knife, cutting almost but not quite all the way through, and open it out flat on the board. If the crumb is very thick, pull out a little of the soft interior so the sandwich presses down evenly.
  3. Spread 2 tsp of yellow mustard over both cut faces, right to the edges. No butter, no mayonnaise and no lettuce or tomato go inside a Cuban.
