Denver Sandwich

A diner classic from the American West: a fluffy omelette of eggs, diced ham, onion and green pepper, folded and tucked between two slices of buttered toast.

Method

  1. Dice 50 g of cooked ham into 1 cm pieces, and finely dice 40 g of onion and 40 g of green pepper.
  2. Crack 2 eggs into a bowl, add 0.25 tsp of fine salt and a good grind of black pepper, and beat with a fork for about 30 seconds until the yolks and whites are completely blended and slightly frothy.
  3. Melt 2 tsp of the butter in a 20 cm non-stick frying pan over medium heat. Add the onion and green pepper and cook 2 minutes until softening, then add the ham and cook a further 2 minutes until the edges of the ham are lightly browned and the pepper has lost its raw crunch. Spread the filling evenly across the pan.
