Election Cake

A yeast-raised New England fruit cake, spiced with cinnamon, nutmeg and mace and studded with brandy-soaked raisins, currants and citron. Once baked in huge batches for town election days in Connecticut, here it is scaled down to a single small loaf, finished with a thin white sugar glaze.

Method

  1. Put 30 g raisins, 20 g currants and 15 g chopped candied citron peel in a small bowl, pour over 1 tbsp brandy, stir and leave to soak for 30 minutes, turning once so the fruit plumps evenly.
  2. Warm 60 ml milk in a small pan to blood heat (about 37C — it should feel neither warm nor cool on the wrist). Pour into a mixing bowl, whisk in 1 tsp fast-action yeast and 40 g of the plain flour to make a loose sponge. Cover with a cloth and leave somewhere warm for 45 minutes, until domed and frothy with a yeasty smell.
  3. Meanwhile, beat 20 g softened butter with 45 g caster sugar in a second bowl until pale and fluffy, 2-3 minutes. Beat in 1 small beaten egg a little at a time, then 0.5 tsp ground cinnamon, 0.25 tsp grated nutmeg, 0.13 tsp ground mace and 0.25 tsp fine salt.
