The American lunch-counter classic: thick slices of bologna nicked at the edges so they curl and blister in the pan, stacked on soft white bread with yellow mustard, mayonnaise and a slice of American cheese melted on top.

Method

  1. Take the 3 slices of bologna and cut a single slit in each one from the outside edge to the centre, like a clock hand pointing to twelve. This stops the slice doming into a bowl as it heats.
  2. Set a cast-iron or heavy non-stick skillet over medium-high heat and melt 1 tsp of butter until it foams. Lay the bologna in flat and fry for about 2 minutes, pressing lightly with a spatula, until the underside is deep brown with blistered, frilled edges.
  3. Flip the slices and fry the second side for 1 to 2 minutes more. The edges should be crisp and slightly curled and the surface glossy; do not let the butter burn, dropping the heat to medium if it darkens.
