Fruit Salad

A bowl of ripe fruit cut into bite-sized pieces and dressed in its own juices, lightly sweetened with sugar and sharpened with lemon, then chilled and finished with mint.

Method

  1. Slice the top and bottom from 1 orange, stand it on a board and cut away the peel and all the white pith. Working over a mixing bowl so every drop of juice is caught, cut the flesh into segments, free them from the membrane and halve each one crosswise. Squeeze the membranes over the bowl and discard them.
  2. Add 1 tsp of caster sugar and 1 tsp of lemon juice to the collected orange juice in the bowl and stir with a spoon for about 30 seconds, until the sugar has completely dissolved into a light syrup. This is the dressing — the fruit needs nothing else.
  3. Hull 60 g of strawberries and cut them into quarters, or halves if small. Halve 60 g of seedless grapes lengthways. Add both to the bowl and turn once in the syrup.
