Method

  1. In a bowl, stir together 150 g plain flour, 3 g fast-action yeast, 0.5 tsp caster sugar and 0.5 tsp fine salt. Pour in 100 ml warm water (about 38C) and 1 tsp olive oil and mix to a shaggy dough.
  2. Turn out onto a lightly floured worktop and knead 8 minutes, until smooth and springy and the dough pulls back when stretched. Return it to the bowl, cover with a cloth and leave in a warm spot for 1 hour, until doubled.
  3. While the dough rises, make the donair sauce: whisk 2 tbsp evaporated milk with 1.5 tbsp icing sugar and 0.25 tsp garlic powder until smooth, then whisk in 1 tsp white vinegar and stop the moment it thickens. Cover and chill for at least 30 minutes.
