The Armenian harvest classic: a small pumpkin hollowed out and filled with rice, dried apricots, prunes, raisins and walnuts, sweetened with honey and cinnamon, then baked whole until the flesh is soft enough to scoop straight from the shell. Traditionally brought to the table whole and cut open in front of the guests.

Method

  1. Rinse 60 g of rice under cold water until it runs clear. Drop it into a small pan of boiling salted water and parboil 6 minutes, so the grains are softened at the edge but still chalky in the middle. Drain well and spread out to cool for a few minutes.
  2. Put 30 g of halved dried apricots, 20 g of stoned prunes and 20 g of raisins in a bowl and cover with hot water for 10 minutes to plump them, then drain and pat dry.
  3. Heat the oven to 180C. Using a small sharp knife held at an angle, cut a lid around the stalk of 1 pumpkin, lift it off, and scrape out all the seeds and stringy fibres with a spoon, leaving the flesh smooth and the wall intact.
