The classic American griddled beef burger: a loosely packed patty of 80/20 chuck smashed on a hot pan until deeply crusted, draped with melting American cheese and stacked in a buttered, toasted bun with lettuce, tomato, onion and pickles.

Method

  1. Take 150 g of coarsely ground chuck straight from the fridge and gather it into a loose ball with your fingertips — do not knead or compact it, or the burger will turn springy. Return the ball to the fridge while you prepare everything else.
  2. Slice 2 slices tomato rounds 5 mm thick, peel off 1 leaf lettuce leaf and tear it to fit the bun, cut 2 rings paper-thin onion rings and have 3 slices pickle slices ready on a plate.
  3. Split the bun and spread the cut faces with 1 tsp of softened butter. Toast them buttered-side down in a dry heavy skillet or cast-iron pan over medium heat for 1–2 minutes, until evenly golden, then lift onto a board.
