Icebox Cookies

An old-fashioned American cookie: a buttery, vanilla-scented dough rolled into a log, chilled in the icebox until firm, then sliced thin and baked to crisp, golden-edged rounds. A small batch for one, with pecans folded through.

Method

  1. Put the 35 g of softened unsalted butter and the 30 g of light brown soft sugar in a small bowl and beat with a wooden spoon or hand whisk for about 3 minutes, until the mixture lightens in colour and looks fluffy with no lumps of sugar left.
  2. Beat in the 0.5 tsp of vanilla extract, the 1 tsp of whole milk and the 1 pinch of fine salt until the mixture is smooth and glossy rather than split.
  3. Sift the 60 g of plain flour over the top and fold it in with a spatula, stopping as soon as the dough clumps together — overworking it makes the cookies tough. Fold through the 15 g of finely chopped pecans.
