Finnish Christmas star tarts: crisp puff pastry pinwheels folded around a dark, spiced prune jam and dusted with icing sugar. Baked in every Finnish kitchen through December and eaten warm with glogi.

Method

  1. Put 60 g of pitted prunes in a small saucepan with 100 ml of water and bring to a gentle simmer. Cook uncovered over low heat for 15 minutes, until the prunes are completely soft and most of the water has gone.
  2. Mash the prunes to a smooth, thick jam with a fork or hand blender, then stir in 1 tsp of caster sugar, 0.5 tsp of lemon juice and 1 pinch of ground cinnamon. The jam should hold its shape on the spoon; if it is loose, cook it another 2 minutes. Spread it on a plate and leave to cool completely — warm jam will melt the pastry.
  3. Heat the oven to 225C and line a baking sheet with baking paper. On a lightly floured worktop, roll 120 g of puff pastry out to an even 3 mm thickness and trim it into 3 squares of about 9 cm.
