The classic Finnish cabbage casserole: sweet buttery cabbage browned with dark syrup, folded through minced meat and rice, then baked until the top catches. Marjoram is the signature seasoning and lingonberry jam is not optional at the table.

Method

  1. Put 25 g of rice and 75 ml of water in a small saucepan with a pinch of the salt, bring to the boil, then cover and cook on the lowest heat for 12 minutes until the water is absorbed and the grains are just tender. Leave covered off the heat. Heat the oven to 200C.
  2. Core and finely shred 250 g of white cabbage. Melt 10 g of butter in a wide frying pan over medium heat, add the cabbage and cook for 15 minutes, stirring often, until it has collapsed, lost its raw smell and taken on golden patches at the edges.
  3. Stir 1 tbsp of dark syrup through the cabbage and let it cook another 5 minutes over medium heat until glossy and lightly caramelised — this sweet-savoury browning is what makes the dish taste Finnish rather than plain. Scrape the cabbage into a bowl.
