Monte Cristo Sandwich

An American diner classic: ham and Swiss layered between bread, dipped in egg batter and fried in butter until golden, then dusted with icing sugar and served with raspberry jam for the sweet-savoury finish.

Monte Cristo Sandwich

Instructions

  1. Lay the 2 slices of bread on a board and spread 1 tsp of Dijon mustard thinly over the facing sides.
  2. Layer 60 g of thinly sliced ham over one slice, folding the slices so they sit level, then top with 40 g of Swiss cheese, keeping the cheese just inside the crusts so it does not run into the pan. Close the sandwich and press down firmly with your palm.
  3. In a shallow dish wide enough to take the sandwich, beat 1 egg with 2 tbsp of whole milk and a pinch of salt until completely smooth and no strands of white remain.
