New Jersey Sloppy Joe

The deli sandwich of northern New Jersey: three slices of thin rye layered with deli ham and turkey, Swiss cheese, drained coleslaw and Russian dressing, pressed and cut into neat quarters. Nothing to do with the minced beef version — this one is cold, tall and cut small.

Method

  1. Put 60 g of finely shredded white cabbage and 15 g of grated carrot in a bowl, scatter over a good pinch of fine salt and toss. Leave to stand 10 minutes, then squeeze the vegetables hard in your hands or a clean cloth — the slaw must be dry or it will flood the sandwich.
  2. Return the squeezed slaw to the dry bowl and dress it with 0.5 tbsp of mayonnaise, 1 tsp of cider vinegar and 0.25 tsp of caster sugar. Season with black pepper and toss until every shred is barely coated, not creamy.
  3. For the Russian dressing, whisk 1 tbsp of mayonnaise with 2 tsp of chilli sauce, 1 tsp of sweet pickle relish, 0.25 tsp of Worcestershire sauce and a pinch of paprika until it is an even salmon pink.
  4. Lay the 3 slices of thin rye side by side on a board and spread the Russian dressing thinly right to the edges: both faces of the middle slice, and the inner face of the top and bottom slices.
