Pickle Relish

A Swedish sweet-sour gherkin relish, or smörgåsgurka, with finely diced cucumber, onion and red pepper simmered in a classic 1-2-3 vinegar brine with mustard and dill seed. Sharp, sweet and crunchy — the standard companion to meatballs, sausages and open sandwiches.

Pickle Relish

Method

  1. Trim 200 g of gherkin cucumber but leave the skin on, then cut it into 4 mm dice — small enough to spoon onto a sandwich, big enough to stay crunchy. Toss the dice in a bowl with 1 tsp of fine salt, cover and leave at room temperature for 1 hour to draw out the water.
  2. Tip the cucumber into a sieve, rinse thoroughly under cold water to wash off the salt, then press it hard against the sieve and finally squeeze it in a clean tea towel until barely any liquid runs out. This is what keeps the finished relish from going watery.
  3. Cut 40 g of yellow onion and 50 g of red pepper into dice the same 4 mm size as the cucumber, so the relish stays even on the spoon.
