Method

  1. Rinse 30 g of short-grain pudding rice and put it in a small heavy saucepan with 60 ml of water. Bring to the boil, then cover and simmer on the lowest heat for 8-10 minutes, until the water is absorbed.
  2. Pour in 120 ml of whole milk, stir, and cook uncovered over a very low heat for about 30 minutes, stirring every few minutes and scraping the base so it does not catch, until you have a thick, glossy porridge. Set aside to cool for 10 minutes.
  3. Meanwhile, put 200 g of peeled, sliced carrots in a pan of lightly salted water, bring to the boil and cook 15-18 minutes until they collapse under a fork. Drain well and mash coarsely, or press through a ricer for a smoother laatikko.
