Rocky Mountain Oysters

A prairie classic from the ranching country of southern Alberta and the foothills: bull testicles peeled, sliced thin, soaked in milk, rolled in seasoned flour and cornmeal and deep-fried until golden. Crisp outside, tender as veal inside, and served hot with lemon and hot sauce.

Method

  1. Lay the 250 g of testicles on a board. Run a sharp boning knife down the length of each one, cutting only through the tough white outer membrane, then work your fingers under the skin and peel it off in one piece, taking the surrounding fat and any silverskin with it. Discard the membrane.
  2. Put the peeled meat on a plate and into the freezer for 30 minutes, until firm but not frozen solid. This is what lets you cut it cleanly. Slice across the grain into medallions about 6 mm thick.
  3. Put the slices in a bowl with 120 ml of milk and a pinch of the salt, cover and soak in the fridge for 1 hour. The milk draws out blood and softens any strong flavour. Drain in a colander and pat the slices dry on kitchen paper.
