Sloppy Joe

A soft hamburger bun heaped with sweet-tangy tomato-simmered ground beef, the American lunch-counter classic. Everything cooks in one skillet in about twenty minutes, and it is meant to be eaten with plenty of napkins.

Method

  1. Warm 1 tsp of vegetable oil in a heavy 20 cm skillet over medium-high heat. Add 150 g of ground beef and press it flat, leaving it undisturbed for 2 minutes to take colour, then break it into small crumbs with a wooden spoon and cook a further 3 minutes until no pink remains.
  2. Add 60 g of finely chopped onion and 50 g of finely chopped green pepper and cook 3 minutes, stirring, until the onion turns translucent. Stir in 1 clove of minced garlic and cook 1 minute more, just until fragrant. If there is more than a thin film of fat in the pan, tip the excess away.
  3. Clear a space in the pan and fry 1 tsp of tomato purée for 30 seconds to darken it, then stir it through the meat with 2 tbsp of tomato ketchup, 1 tsp of Worcestershire sauce, 1 tsp of yellow mustard and 1 tsp of light brown sugar.
