Rinse 80 g sushi rice in cold water, swirling and draining 3 or 4 times until the water runs almost clear, then drain well. Put it in a small heavy pan with 100 ml water, cover, bring to the boil, drop to the lowest heat and cook 12 minutes. Take off the heat and leave covered for 10 minutes.
Stir 1 tbsp rice vinegar with 1 tsp caster sugar and 0.25 tsp fine salt until dissolved. Tip the hot rice into a wide bowl, pour the seasoning over and cut it through the grains with a spatula, fanning to cool, until the rice is glossy and just warm.
Line a 12 cm round tin or ring with cling film, pack the rice in and press down hard with wet hands so it is even and about 1.5 cm thick. Chill 30 minutes so the patty holds together, then turn out and peel off the film.
