Thousand Island Dressing

The classic creamy American dressing: mayonnaise slaked with ketchup and sweet pickle relish, sharpened with grated onion and lemon, with chopped hard-boiled egg folded through. Good on a wedge of iceberg, in a shrimp cocktail, or on a burger.

Method

  1. Lower 1 egg into a small pan of gently boiling water and cook for 9 minutes, so the yolk is just set through. Drain, cool under cold running water for 2 minutes, then peel and chop very finely.
  2. Grate 1 tsp of onion on the fine side of a box grater, catching the juice as well as the pulp — grating rather than dicing gives the dressing its smooth savoury background without raw crunch.
  3. In a small bowl, whisk 3 tbsp of mayonnaise with 1 tbsp of tomato ketchup for about 30 seconds, until the colour is an even pale salmon pink with no streaks.
