A slow-simmered Ashkenazi sweet stew of carrots, sweet potato and dried fruit, glossed with honey and orange juice and warmed with cinnamon. Traditional at Rosh Hashanah, when sweetness stands in for a sweet new year, and alongside brisket on Shabbat.

Method

  1. Put 45 g of pitted prunes and 25 g of dried apricots in a small bowl and pour over 80 ml of orange juice. Leave to soak for 15 minutes, until the fruit has plumped and softened.
  2. While the fruit soaks, peel 200 g of carrots and cut them into thick 2 cm rounds — chunky, so they hold their shape through the long simmer. Peel 100 g of sweet potato and cut it into 3 cm chunks.
  3. Melt 2 tsp of schmaltz or butter in a small heavy-based saucepan or casserole over a medium heat. Add the carrots and sweet potato and turn them in the fat for 2-3 minutes, without letting them brown.
